Different recipes call for different cuts of Welsh beef. Knowing which cuts can be slow-cooked or flash-fried can make all the difference to the flavour and texture of the meat.
For instance, the round making up the top part of the back leg is made up of 3 cuts: topside, silverside and top rump. These are all lean cuts ideal for roasting. The silverside, in particular, is excellent for a roast cooked slowly with wine or stock.
Meanwhile, the fillet is cut from the inside of the loin. Being an under-utilised muscle, the meat is quite tender compared to other parts. This makes it perfect for both a Sunday roast and beef wellington.
