These plump hand-plucked roaster chickens are ideal for smaller festive gatherings. They come from the Mee family in Herefordshire. They've been farming poultry for more than 50 years, and their free-range birds are reared in small flocks to the same high-welfare standards as their Soil Association-certified Organic birds. So from dawn to dusk, the birds roam freely, foraging and dustbathing in grassy fields, and at night they're safely housed in airy barns, with plenty of space to move around and stretch their wings. And because they grow slowly and naturally, and lead such active, healthy lives, the result is a really succulent, well-muscled bird, with meaty legs and plenty of richly flavoured breast meat. When it comes to Christmas, you want the best – and for duck that means Creedy Carver. Reared in Devon by the Coleman family, these plump free-range ducks are a favourite with top chefs, and it's not hard to see why: the birds are raised in small flocks to high welfare standards, and spend their days foraging in grassy fields, complete with ponds for bathing and preening. They grow slowly and naturally, and the result is a really meaty, bird – rich and beautifully succulent. Prick the skin all over with a fork then rub with salt before roasting for super-crispy skin. Our dry-plucked free-range geese come from Elaine and Daryn Williams, whose farm overlooks the beautiful Wye Valley. Bred for flavour, these magnificent free-range Bronze-breed turkeys are very special birds. They’re reared in small flocks by the Holt-Wilson family on their organic farm near Raglan in Monmouthshire. The birds spend their days outdoors, roaming the fields and hedgerows and growing slowly to full maturity on a natural diet of organic grain and foraged seeds and berries. The result is an exceptionally tasty turkey with more meat per kilogram than faster-grown birds.
