From the family-run Caws Teifi dairy in Ceredigion, Celtic Promise is a pungent washed-rind cheese with a smooth, buttery texture and delicate flavour that deepens as the cheese ripens. Handmade using raw organic cow’s milk from local herds, the 500g wheels start life as Caerphilly and are then washed in cider twice a week for seven weeks to develop the distinctive moist pink rind and pungent aroma. Made using animal rennet.
