A meaty Christmas Cockerel is just the job if you prefer chicken to turkey, but still want plenty to go round. Ours come from Soanes Poultry in the Yorkshire Wolds. The Soanes family have been farming poultry for more than 70 years, and their birds are reared in airy barns to high welfare standards. The result is a really succulent, well-muscled bird, with plump legs and plenty of richly flavoured breast meat. The perfect festive centrepiece!
