Free-Range Duck Breasts x 2


Our Free-Range Duck Breasts come from Creedy Carver in Devon, supplier to many of the UK’s top chefs. Their free-range birds are reared to exceptionally high welfare standards and traditionally dry plucked and hand finished. The result is exceptionally flavoursome duck, rich and deliciously succulent. These meaty breast fillets come in packs of 2 (approx weight 450-500g), skin on and ready to cook. Delicious served pink. How to cook

  1. Defrost the duck breasts in the fridge overnight.
  2. 30 minutes before cooking, take the duck breasts out of the fridge and remove the packaging.
  3. Preheat the oven to 200˚C/180˚C fan/gas mark 6.
  4. Lightly score the skin with a sharp knife then season all over with a good grinding of salt and pepper.
  5. Place the duck breasts skin-side down in a cold non-stick frying or griddle pan with no oil.
  6. Place on the hob over a low to medium heat and gradually turn up the heat. This allows the skin to release the fat slowly, so it crisps up beautifully.
  7. Continue turning up the heat, being careful not to burn the skin.
  8. Once the fat has rendered out, turn the breast over and continue cooking for a couple of minutes.
  9. Transfer to a pre-heated roasting tray, pour over the rendered fat and cook for 8-10 minutes for pink meat, a little longer if you prefer your duck well done.
  10. Remove from the oven and rest for 10 minutes before serving.
