When it comes to Christmas, you want the best – and for Free-Range Duck that means Creedy Carver. Reared in Devon by the Coleman family, these flavoursome ducks are a favourite with top chefs, and it’s not hard to see why: the birds are raised in small flocks to high welfare standards, and spend their days foraging in grassy fields, complete with ponds for bathing and preening. They grow slowly and naturally, and the result is a really meaty bird – rich and beautifully succulent. Prick the skin all over with a fork then rub with salt before roasting for super-crispy skin.
