Wild Mallard


If you like the rich taste of duck, you’ll love our Wild Mallard. Leaner, and with greater depth of flavour than farmed duck, it’s a real seasonal treat, and at it’s very best served pink.
These are wild birds, so weights vary, but as a general rule our mallards weigh around 600-700g and will serve 2 people.

How to cook

To roast

  1. Remove the mallard from the fridge 30 mins before cooking.
  2. Preheat the oven to 220˚C/200˚C fan/ gas mark 7.
  3. Prick the skin all over with a fork, rub with salt and pepper and add a quartered orange and a knob of butter to the cavity.
  4. Transfer to a roasting tray and roast for 30 mins for pink meat, a little longer if you prefer your duck well done.
  5. Rest for 10-15 mins before carving.
