Our April artisan cheese of the month is Trefaldwyn Blue, a luscious and relatively new cows’ milk blue cheese called after the ancient name for Montgomery. Full-flavoured and luxuriously creamy, it’s made by Clare Jones, a former primary school teacher and Montgomery local, and it’s already picked up a slew of awards, including Best Welsh Cheese at the World Cheese Awards 2021-22. Suitable for vegetarians.
