    Caerphilly is traditionally a young, fresh cheese, but Gorwydd Caerphilly is matured longer – some 2-3 months – for a crumbly, lactic, lemony core that becomes more soft and mushroomy towards the natural mould rind. It's a true artisinal cheese, handmade by the Trethowan family using rich raw milk from pedigree Holstein and Jersey cows. Our Comté comes from Maison Marcel Petite, who mature their cheeses over many months in the stone-vaulted cellars of Fort Saint Antoine, high in the Jura Mountains.
