This is proper farmhouse Double Gloucester, handmade near Dymock by artisan cheesemakers Charles Martell & Son, who rescued the cheese from extinction back in the early 1970s. It’s made by hand to a traditional recipe, using milk from both the morning and evening milking of their own herd (hence “Double” Gloucester). Matured for between 4 and 8 months, it has a firm, smooth texture, traditional rich, golden colour, and a distinctive taste somewhere between lactic, lemony Cheshire and a full-flavoured mature Cheddar. Suitable for vegetarians.
